Cupcakes Galore


As some of my may know I love a spot of baking and over the last couple weeks I have made a couple batches of cup cakes so I thought I would share them quickly and show you a couple of pictures. 

For all the cupcakes I used the same basic recipe: 200g Self Raising flour, 200g Caster Sugar, 200g Butter (I use stork), 2 medium eggs and vanilla extract. 

For the butter Icing I use: 140g Butter (Proper butter is best) and 280g Icing sugar. 

These measurements make 12 good sized cupcakes but you can change this to fit in with however many you want to make. i.e. 150g grams of each ingredient makes 9 cupcakes. 


I also follow the same method for each. I cream the butter and sugar until soft and white, add in whisked eggs and vanilla extract then fold in flour a little at a time.



Mocha Cupcakes 


To get the coffee flavoured sponge: dissolve 1tsp of instant coffee (stronger the better) with 1tbsp of boiling water and add to mixture. I found I had to add a tiny bit more flour to compensate for the extra water. When distributing the mixture I added a 1/2 tsp of nutella into the centre of each cupcake. 
The butter icing uses the recipe above plus 2tsp of cocoa powder and 1tbsp of milk. 



Peanut Butter Cupcakes


This cupcake is just a plain vanilla sponge and to make the icing substitute half of the butter for crunchy peanut butter. This was definitely my favourite! It is sweet without being to sickly. 

Rainbow Cupcakes


When I set out to make these cupcakes they were going to have actual rainbows and clouds, but it didn't quite work so I made little hearts instead. The hearts were made out of fizzy laces. The rest of the cupcake is simple just a vanilla sponge and vanilla butter icing with a couple drops of blue food dye. 


Chocolate and Hazelnut Cupcakes



These again are just a plain vanilla sponge but with a bit of Nutella in the centre. Decorated with chocolate butter icing and topped off with roasted hazelnuts. My second fave and it really does just taste like Nutella! ummmm
